Matzo (Yiddish) Matzah (Hebrew), is a type of unleavened baked bread, made only with wheat flour (or other grains such as oats, barley and rye) and water. The dough preparation should not take longer than 18 minutes to prevent the dough from rising.
According to Judeo-Christian tradition, the Israelites made unleavened bread before fleeing ancient Egypt because there was no time to wait for the dough to ferment.
